In the PowerBI Desktop,
When 'get data', I enter the Server name when prompted, and it just connects right away without asking me for userid/password, because it uses an previously set up dat source...
Although you can use File->Options->Data Source Settings
and edit the credentials used to connect to the server, you can't rename the datasource or create new data sources to the same Server.
The Data Source name is the Server name, and thus the last one configured remains in force (even though any prior created reports don't seem to be affected). So, we really need the ability to (re)name data sources and have multiple sources for the same Server.

There are cases where the security access granted to the underlying data needs to be different. For other reporting tools we handle this today by using multiple service accounts with specific permissions. End users are granted access as needed to predefined data source connections which are distinguished based on the User ID of the service account.
Having only one data source per server prevents us from exercising the same level of security we currently us in other areas.

I agree. This idea should also target PBI Service where you cannot have same data source (server name) with different user.
